Fresh Strawberry Galette eggless recipe for baking beginners
Are you new to baking? If you are, then perhaps this is the perfect recipe for you to begin your journey of baking. This fresh strawberry galette recipe is absolutely doable for everyone, including the kids. All you need is some good quality season’s fresh strawberries, good quality butter and an hour of time. That’s it!
What is Galette?
Galette is a French pastry which is very similar to a tart or pie. However, unlike the tart or pie, it doesn’t require any particular baking pan. All you need is a flat baking sheet pan to make some free-form pie. By definition, galette means flat cake made out of pastry dough with a variety of filling, such as fresh fruits, chocolate, etc.
The galette pastry dough is very similar to the one used for tarts. In fact, here I have used my shortcrust sweet pie crust dough recipe. It is mildly sweet, supremely buttery and flake once it has been baked to the perfection.
The best thing about a galette is you can be as creative as you like about the filling. You can use any fruit and simply slice them up (or chop them) to make the filling for a galette. It doesn’t need any special skill to get that correct.
This fresh strawberry galette is the perfect winter dessert with its buttery and flaky crust complementing the sweet strawberry centre. You can make a big one by rolling out the dough into a big round galette or you can make these mini strawberry galettes by diving the dough into two.
I made these for Valentine’s Day as strictly no-sharing-dessert-recipe, and they turned out to be super fantastic. I also added some almond meal to the crust dough which gave it a subtle flavour. Unlike my sweet pie crust recipe, I omitted the egg. So, if you are looking for eggless dessert recipes then this is your call!

Let’s see how to make these perfectly simple & easy Eggless Strawberry Galettes – Step-by-step recipe for making Strawberry Galette

- Take a bowl and mix flour, almond meal and the cold butter cut in small cubes together.
- Now, break the butter using the fingertips while mixing it with the flour mix. Keep doing this till there are no bigger lumps of butter are left.

- Now, add water, one tablespoon at a time and bring everything together into a dough. Once you see everything coming together into a big lump, stop kneading. Do not over mix. Cover the bowl with clingwrap sheet and refrigerate for 20 mins for it to rest.
- When you are ready to bake, pre-heat the oven at 180°C. Divide the dough into two parts. Now, roll one of them gently on a floured surface into a circular disc of quarter-inch thickness.

- Spread some jam on the pastry where you will place the filling. This will ensure that the pastry doesn’t become soggy due to the liquid from the fruits
- Place the strawberry filling (check the recipe card below for the recipe) in the centre. Start bringing the edges over the filling thus securing them. Gently press the pastry so that it doesn’t open up while baking.

- Transfer the galette on the baking tray lined with parchment sheet or a non-stick baking tray
- Repeat the steps with the second galette. Sprinkle some brown sugar on the top. Bake them for 45 minutes. Once done, you will see that the edges to the crust have turned golden and the base is beautifully baked with no soft & uncooked spots.

- 1 cup All Purpose Flour
- 1 cup Butter Cold
- 3 tbsp Water Ice Cold
- 10 Almonds
- 2 tbsp Sugar
- 4 Strawberries
- 1 tsp Brown Sugar
- 1 tsp Cornflour
- ½ tsp Dried Rosemary
- Milk To brush the Galette
- Melted Butter To brush the Galette
- 1 tsp Strawberry Jam or Mix fruit Jam
