I mean, while they are in the pot, I can very well sorting out my kitchen, or making spaghetti or a simple fried rice to go with these.

- 400 gms Button Mushrooms
- 1 Onion Small – Finely Chopped
- 1 tbsp Butter Omit for Vegan option, replace with EVOO
- 2 tbsp Extra Virgin Olive Oil (EVOO)
- 2 Cloves of Garlic
- 1 tsp Dried Rosemary
- 1 tsp Chili Flakes
- Salt to Taste
- 1 tbsp White Vinegar
- Finely Chopped Coriander Leaves to Garnish
Heat butter and oil in a pan. Add the finely chopped Onion and let it sweat for couple of minutes.
Once they turn translucent, add the mushrooms. Now, toss them around and let them fry on low-medium heat for 4-5 minutes.
It will release a lot of water. Let these mushrooms cook in their own liquid.
Once the liquid is absorbed, add salt and the seasonings like rosemary and chili flakes.
By this time, the mushrooms will have attained a darker shade. Add the vinegar and deglaze the bottom of the pan. That is, mix everything well, and scrape the seasonings stuck at the bottom of the pan.
Grate the garlic in the mushrooms at this stage and give everything a good stir.
Check for salt at this stage and add if required.
Serve with freshly chopped Coriander leaves.
